Our Story

Bakery Louise, a ghost concept from the Confidant team, is a tribute to Louise Kalajian. An Armenian refugee, Louise navigated life's difficulties with grace, always extending hospitality and warmth to her loved ones. She was renowned for her exceptional baking and hosting, and Bakery Louise aims to embody her spirit. The concept draws inspiration from both Louise herself and the classic luncheonettes and bakeries of New York City.

Mariah Neston, the Executive Pastry Chef at Confidant Hospitality, began her culinary journey over ten years ago as a pastry cook in New York. A graduate of the Culinary Institute of America, she honed her skills at several of New York City's premier restaurants. Neston's career highlights include working with Major Food Group and the Frenchette Group, with her most notable achievement being the opening Executive Pastry Chef of Le Rock on Rockefeller Plaza.

Bakery Louise embodies Mariah Neston's heritage, her passion for New York, and her distinctive approach to the craft of pastry and hospitality. The bakery is named in honor of Mariah's great-grandmother.
